Avocado and corn salad







    Ingredients                                          Method



      2 firm large ripe avocados, halved,
      stones removed, peeled, finely chopped
      410g sweet corn                                     Combine the avocado, corn, shallot,
      3 shallots, ends trimmed, thinly sliced             coriander and lemon juice in a medium
      1/4 cup chopped fresh coriander                     bowl. Serve.
      2 tablespoons fresh lemon juice
