Courgette Salad with Tofu
Ingredients Method
Tofu Marinade. For the Tofu Marinade.
1 pack extra firm tofu Drain and press tofu
100 ml red wine vinegar
100 ml water Once most of the liquid has been removed
1 ½ teaspoons oregano from the tofu cut into cubes and set aside.
1 tablespoon olive oil Combine all the ingredients for the tofu
Juice of half a lemon marinade and whisk to combine. Add in cubed
Salt and pepper tofu and place in the refrigerator to chill. Leave
for at least two hours for flavors to combine.
For the salad. The longer it sits to marinate the better.
1 zucchini/ courgette (large)
Ear of corn For the Salad
Handful of cherry tomatoes (diced) Fire up the grill and toss your ear of corn on.
1 shredded carrots Leave to cook for a few minutes on each side or
2 scallions or spring onion (sliced thin) until you get a nice char. Then cut the corn off
Handful of mixed greens the cob and set aside.
Using a vegetable peeler slice zucchini into
ribbons and place into a large bowl. Add in the
rest of the vegetables and toss to combine.
Using a slotted spoon add the marinated tofu
cubes to the salad. Reserve the remaining
marinade for the dressing.
