Cucumber and
Strawberry Salad
Ingredients Method
150 g strawberries Place the oil, vinegar and mustard in a bowl
1/2 cucumber and whisk well. Stir in the finely chopped fresh
2 spring onions, thinly sliced mint and set to one side.
60 ml extra-virgin olive oil Halve the cucumber lengthways and use a
2 tablespoon fruit vinegar (passion) or small teaspoon to remove the seeds from the
cider vinegar centre. Slice the cucumber into thin half-moon
1 teaspoon dijon mustard shapes. Thinly slice the strawberries. Very
thinly slice the spring onions.

Add the strawberries, spring onions and
cucumber to a bowl. Pour the dressing over the
top and mix to combine.
