Veggie Eggs







    Ingredients                                          Method





      150g white breadcrumbs
                                                          Hard boil and remove the shell from the
                                                          eggs.
      40g cheese, crumbled or grated
                                                          Mix together the breadcrumbs, cheese,
      1 leek very finely chopped                          leeks, parsley, thyme , mustard and
                                                          some pepper and salt in a bowl.
      1 tablespoon chopped parsley
                                                          Add the 2 eggs and mix together, if the
                                                          breadcrumb mixture is a little dry add a
      Half teaspoon thyme
                                                          touch of milk.

      Black pepper and salt                               Cover the eggs in the breadcrumb mix,
                                                          but not to thick. Then roll in the beaten
      2 eggs, lightly beaten                              egg and cover with Golden
                                                          breadcrumbs. Chill the eggs in the fridge
      1 egg lightly beaten                                for at least half an hour to firm up.

                                                          Heat the oil and fry until golden.
      Golden breadcrumbs


      1 teaspoon English mustard

      1-2 tablespoon milk if to dry (optional)


      3-4 eggs


      sunflower oil or corn oil to deep for
      frying.
