Vegan Stir Fried Udon


      Noodles




    Ingredients                                          Method



      1 tablespoon extra-virgin olive oil                 Heat the oil in a wok, add the veggies, the ground
      160 g onions                                        ginger, 2 tablespoons of tamari or soy sauce and
                                                          the water. Cook for 5 minutes over high heat or
      149 g red pepper                                    until veggies are ready. You can add more water or
      149 g green pepper                                  tamari if you want.
      110 g carrots                                       Cook Udon noodles according to package
      1 teaspoon ground ginger                            directions. I boiled them for 5 minutes. Drain the
      4 tablespoons soy sauce                             noodles.
      59 ml water                                         Add the noodles and 2 tablespoons of tamari or soy
      300 g udon noodles                                  sauce. Stir and cook for about 2 minutes more.
