Courgette ricotta quiche








    Ingredients                                          Method





      1 tablespoon butter                                 Preheat the oven to 220 C / Gas 7. Line a 23cm tart
      4 courgettes, chopped                               tin with the short crust pastry.
      3 eggs                                              Heat the butter in a frying pan over medium high
      2 teaspoons crème fraiche                           heat, and cook and stir the courgettes until lightly
      4 tablespoons ricotta cheese                        browned, about 5 minutes. Add the courgettes into
      50g grated Cheddar cheese                           the pastry case.
      Salt and ground black pepper                        Whisk together the eggs and crème fraiche in a
      1 sheet short crust pastry                          bowl. Stir in the ricotta cheese and the grated
                                                          Cheddar cheese, season with salt and pepper, and
                                                          pour into the pastry case.
                                                          Bake in the preheated oven until a skewer inserted
                                                          near the centre comes out clean, about 30 minutes.
