Chocolate chip


       brioche



    Ingredients                                          Method



       Makes: 1 loaf                                      Prep:20min  ›  Cook:30min  ›  Extra
                                                          time:3hr rising  ›  Ready in:3hr50min
       10g dried active yeast                             Dissolve yeast in warm water and let sit
                                                          until it goes frothy and doubles in
       10ml warm water                                    volume (about 10 minutes).

                                                          Combine flour, butter and eggs in a
       250g plain flour                                   mixer bowl and attach dough hook of
                                                          mixer. Add yeast and mix for 5 to 10
       200g butter, softened                              minutes; cover with a clean drying cloth
                                                          and let rise for up to 3 hours.
       3 eggs                                             Preheat oven to 180 C / Gas 4. Knead
                                                          dough again for about 1 minute. Add

       100g chocolate chips                               chocolate chips and knead again to mix
                                                          in chips. Brush with egg yolk to glaze
                                                          and bake in preheated oven for 30
       1 egg yolk
                                                          minutes.

                                                          Set aside to cool before slicing.
