Golden Savoury Rice








    Ingredients                                          Method



      1 onion
      3 mushrooms                                         Prepare the vegetables:
      1/2 red pepper De-seed and                          Peel and chop the onion and then slice the mushrooms
      chopped into dice                                   De-seed and dice the red pepper
      1 tomato
                                                          Chop the tomato
      2 teaspoons olive oil
                                                          Fry the onion in oil until soft.
      150g long grain rice
                                                          Add the mushrooms and red pepper and cook for a
      1 vegetable stock cube                              further 2 minutes.
      550ml boiling water                                 Stir in the rice.
      50g peas
                                                          Mix the stock cube with the water.
      Pinch of curry powder
                                                          Add the stock, peas and curry powder to the rice
      Salt and pepper to taste                            mixture.
                                                          Simmer for 15 minutes, until the rice is tender.

                                                          Serve the rice in a bowl and sprinkle the chopped tomato
                                                          on top.
