Mustard potato salad







    Ingredients                                          Method





      1½ kg new potatoes, halved if large                 Cook the potatoes in a large pan of
      3 tablespoons olive oil                             salted water until just tender, about 10-
      1 tablespoon wholegrain mustard                     15 minutes. Meanwhile, whisk together
      Juice of 1 lemon                                    the olive oil, mustard and lemon juice in
      3 spring onions, chopped
                                                          a large bowl. Drain the potatoes and
                                                          leave to cool for 5 minutes, then tip into
                                                          the bowl along with the spring onions.
                                                          Toss everything until the potatoes are
                                                          well coated. Leave to cool.
