Pearl Barley, Pomegranate
and Avocado Salad
Ingredients Method
150 g barley Soak the barley for at least 1 hour in
Luke warm water, then boil it for 7-8
½ pomegranate minutes in salted water.
Strain the water and cool it down to
½ Persimmon chopped into cubes room temperature.
Add chopped avocado and tomato to
1 avocado chopped in 1 cm cubes
the barley with pomegranate,
Persimmon, chopped
Handful of chopped parsley leaves
Sautéed onions, chopped parsley leaves,
mint leaves, lemon juice and extra virgin
½ handful of chopped mint leaves
olive oil.
2 tablespoon extra-virgin olive oil Add salt and pepper to taste, and serve
cold.
Juice of ½ a lemon
Pinch of salt and pepper
1 tomato, chopped in cubes
1 sautéed onions (caramelized
onions)
