Veggie gravy







    Ingredients                                          Method





      2 tbsp olive oil                                    Heat olive oil in a saucepan over a

                                                          medium heat. Add the onion, celery,
      1 onion, finely chopped                             carrot. Cook for a good 30 minutes, until
                                                          the vegetables are really soft and

      1 celery stick, finely chopped                      beginning to turn a golden brown.
                                                          Stir in plain flour and cook for a couple
      1 carrot, finely chopped                            of minutes, then gradually add
                                                          vegetable stock. Simmer for a couple of
      1 tbsp plain flour                                  minutes for the sauce to thicken, add
                                                          the soy sauce and mix well, season to
                                                          taste.
      500ml vegetable stock
                                                          Serve in a jug.

      1 tbsp soy sauce
