Tartar Sauce







    Ingredients                                          Method



      1 egg yolk
      50ml olive oil                                      Make the mayonnaise by placing the egg yolk,
      50ml rapeseed oil                                   gherkin vinegar and lemon juice into a bowl
      1 teaspoon lemon juice                              and beat for about 10 seconds with an electric
      50g pickled gherkins (2 gherkins)                   mixer to combine.
      1 teaspoon vinegar from the gherkins                Gradually add the olive oil and rapeseed oil)
      20g capers (1 heaped tablespoon)                    about 1 tablespoon at a time. Beat on a high
      ½ teaspoon English mustard                          speed after each addition until the oil is fully
      1 tablespoon fresh parsley                          combined and the mayonnaise mixture looks
      Salt and pepper                                     thick and the beaters leave a trail.
                                                          Keep adding the oil and beating until it is all
                                                          combined.
                                                          Finely chop the gherkins, capers, parsley and
                                                          add to the mayonnaise. Add the English
                                                          mustard. Stir.
                                                          Season with salt and pepper before serving.
