Cauliflower, Broccoli

      and Leek Soup




    Ingredients                                          Method



      1 tablespoon olive oil                              Heat the olive oil in a large saucepan
                                                          and fry the onion and garlic until soft,
      1 medium onion (chopped)                            then add all the vegetables cut in
                                                          chunks.

      1 garlic cloves (crushed)                           Add stock to cover the vegetable and
                                                          bring to the boil. Cook for 25 minutes on

      2-3 potatoes (peeled chopped)                       a medium heat until all vegetables are
                                                          soft.

      1 broccoli (floret + stem)                          Liquidise the soup until smooth and
                                                          creamy.
      1 small Cauliflower (chopped)                       Season to taste with salt and pepper.


                                                          Add fresh chopped parsley leaves just
      1 Leeks (chopped)                                   before serving.


      Vegetable stock 1 ½ oxo cubes


      Salt & pepper



      Fresh parsley leaves (chopped)
