Celery Soup







    Ingredients                                          Method





      1tbsp olive oil                                     Heat oil in large pan. Add onions and the

                                                          celery and cook for about 10 minutes
      ½ Onion chopped
                                                          Add potatoes, thyme and vegetable
                                                          stock to cover the vegetables bring the
      6 Celery stalks peeled & chopped                    mixture to a boil, lower the heat and
                                                          cook until all the vegetable are cooked.
      3 Thyme sprigs
                                                          Remove the thyme sprigs. Blend  until
                                                          smooth.
      3 Potatoes peeled & chopped
                                                          Add the milk and season with sea salt
                                                          fresh ground pepper.
      1 Vegetable stock cube
                                                          Serve with fresh bread.

      1 cup of milk


      Sea salt & fresh ground Pepper
