Healthy fruity Cinnamon
bars
Ingredients Method
225 g pitted dates Place all of the ingredients – minus the
125 g almonds water - into a food processor. Blitz for a
70 g raisins couple of minutes until all of the
30 g walnuts ingredients are finely chopped and the
40 g cashew nuts mixture forms a ball. My mixture was
1/2 teaspoon vanilla extract too dry so I added drops of water until it
1 tablespoon cinnamon just came together.
1 teaspoon water (optional)
1 light cream cheese (small snap-tub As soon as it forms a sticky mass, place
of) into a plastic container about 12x16cm.
1 tablespoon sugar Press the mixture down firmly to a
Icing (optional) smooth uniform block. Chill in the
1 light cream cheese freezer for an hour and then turn out
1 tablespoon (approx.) icing sugar onto a cutting surface. The mixture pops
out of the box very easily. Cut into bars
or squares depending on what size you
want.
I made a little drizzle of cream cheese
frosting to give it the real cinnamon bun
effect, but this is entirely up to you if
you want to add it. Mix the little pot of
cream cheese with royal icing sugar until
it gets to a drizzling consistency then
with a spoon drizzle over the top. icing
sugar ensures a thicker icing, but won’t
set completely.
There you have cinnamon bun flavoured
larabars. The dates give them a very
sweet and sticky texture, and even if you
don’t like dates, you will be a convert.
Enjoy!
