Quorn Chicken & Ham

    Ingredients                                          Method



      2 Quorn chicken style fillets                       First of all peel the tomatoes and chop.
                                                          Preheat oven to 180c
      4 Quorn Smokey ham slices


      Vegetarian mozzarella (cut in to slices)            Put the quorn chicken style fillets in to a bowl
                                                          with the hot stock and put to one side.
      1 ½ tablespoons Olive oil                           Put the oil in to a deep frying pan and add the
                                                          onion, sweet peppers and cook for a few
      1 onion finely chopped                              minutes until softened. Then add the tomato
                                                          and mix together put in the basil, oregano, soy
      1 sweet pepper chopped                              sauce, stock and parsley. Mix together season
                                                          to taste with salt and pepper.
      4-5 fresh tomatoes peeled and chopped               Simmer for a few minutes on a low heat.


      1 vegetable cube and 250ml water (To
      make stock)                                         For the Quorn.


      1½ teaspoons basil.
                                                          Cut the quorn in half so it looks like a butterfly
                                                          place the mozzarella slices inside the quorn and
      1 ½ teaspoons oregano                               wrap with the smokey ham slices. Place in an
                                                          ovenproof dish and cover with the tomato
      2 teaspoon parsley                                  sauce.


      1 teaspoon soy sauce
                                                          Cook in the oven for 15 minutes.
      Salt & pepper                                        then serve.




                                                          Tips… If the sauce is to thin add some



                                                          cornflour with water to thicken it.
