Ginger Chilli & Lime


       Sauce



    Ingredients                                          Method





      1 tbsp Olive oil
                                                          Place  the oil, onions, garlic, chili, ginger
                                                          and sugar in to a saucepan, fry for 10
      1 small onion finely chopped
                                                          minutes or until soft. Do not burn it.
      1 clove of garlic grated                            Add the water bring to the boil and
                                                          simmer for 15 minutes.
      A small pinch of chili flakes
                                                          Add the soy, zest and juice, mix well and
                                                          simmer for 5 minutes.
      A small pinch of ground ginger
                                                          Place the cornflour in a cup with some
      2-3 tbsp brown sugar                                water and mix, then add to the sauce
                                                          until it thickened.
      A few drops of soy sauce
                                                          Season to taste with salt and pepper

      Zest of half Lime or lemon                          cook for a few more minutes.
                                                          Serve as a sauce or dip.
      A few drops of lime juice or lemon juice.


      ½ a cup of water (add more if needed)

      Salt and pepper
