Grilled Red Pepper Houmous








    Ingredients                                          Method



      1 red pepper                                        Quarter and de-seed the pepper. Grill, skin side
      150 g chickpeas                                     up, until beginning to char a little and softened.
      1 tablespoon extra-virgin olive oil                 Cool and dice.
      2 cloves garlic (crushed)                           Thoroughly mash the chickpeas with the oil
      1 dash chili sauce                                  and garlic using an electric blender or hand
      1 teaspoon smoked paprika                           blender. Add the grilled red peppers, chilli,
      Black pepper (salt and, to taste)                   paprika and pepper and blend again until
                                                          smooth. Add 1 to 2 tablespoons water to
      1 ½ tablespoons water                               loosen the mixture a little as necessary to make
                                                          a soft dip.

                                                          Check seasoning, adding salt as necessary, and
                                                          spoon into a serving dish.
