Steak Ale & Mushroom



      Pie



    Ingredients                                          Method



      300g Quorn beef style pieces

      or Quorn steak strip                                Pre-heat oven at 180c

      1 tablespoon olive oil

      1 onion finely chopped                              Heat oil in frying pan add the onion,
                                                          carrot & celery and fry gently for 2-3
      1 carrot, thinly sliced
                                                          minutes until softened and starting to

      1 stick celery, thinly sliced                       brown.  Add the mushroom garlic and
                                                          cook for 3 minutes then add the Quorn
      250g mushroom sliced                                and mix together.


      1 garlic clove crushed
      ½ teaspoon brown sugar                              Add the brown sugar, cornflour and cook
                                                          gently for 1 minute. Add the ale stock,
      1 ½ teaspoons cornflour
                                                          tomato puree and herbs.
      100ml pale ale

      1 vegetable stock cube
                                                          Simmer gently for 5 minutes until the
      1 teaspoon tomato puree                             sauce is thickened and bubbling. Season
                                                          to taste.
      ½ teaspoon dried thyme

      ½ teaspoon dried rosemary
                                                          Place the mix in to ovenproof dish put
      220g puff pastry for the                            some beaten egg around the edges of

                                                          the dish.  Cover with puff pastry glaze
      top of pie
                                                          with a little more beaten egg and pop
      1 egg for glaze                                     into the oven for 20 minutes or until the
                                                          pastry is golden.




                                                          Best serve with new potatoes and veg.
