Vegetarian Paella








    Ingredients                                          Method



      1-2 tablespoons olive oil

                                                          Mix the saffron with the vegetable stock
      1 onions, chopped
                                                          and leave for a few minutes.
      1-2 cloves garlic, crushed

                                                          Heat the oil in a large frying pan or wok
      1 red peppers, chopped
                                                          and fry the onions and garlic over a
                                                          medium heat until starting to colour.
      2-3 button mushrooms chopped


       50g frozen peas
                                                          Add the peppers and mushrooms then
       50g green beans                                    fry for 3 minutes. Add the peas, green
                                                          beans, chopped tomatoes, rice, and
       400g cans chopped tomatoes                         paprika. Pour in the stock and mix well.


       100g long grain white rice
                                                          Cover for 30 minutes until the rice is

       1 teaspoon paprika                                 tender and the liquid absorbed. Mix in
                                                          the fresh parsley.
       ½ teaspoon saffron


       400ml vegetable stock                              And serve.


      salt and freshly ground black pepper


      handful fresh parsley, chopped
